Chicken Gyro Wraps

  • 2-3 Chicken Breasts
  • 1 Tomato (chopped)
  • 1 Lettuce (chopped)
  • 1 White Onion (chopped)
  • 4 tbsp Pesto
  • 3 tbsp Olive Oil
  • 8 oz Tzatziki Sauce
  • 5 Tortilla Wraps
  • 1 pinch Salt
  1. Chop your tomato, lettuce, and onion – set aside

  2. Cut your chicken breasts into 1" wide strips, set in a bowl and season with salt

  3. Add 2-3 tbsp of pesto into the bowl with the chicken, stir to combine. Let this marinade with the chicken for an hour on the counter

  4. Heat 2-3 tbsp olive oil on the stove on medium-high heat

  5. Sear chicken in small batches 1 and 1/2 minutes per side – set aside. IMPORTANT: Your chicken will not be finished cooking yet

  6. Once all chicken is seared on both sides, add half of the chicken back into the pan, set heat to low, cover and cook on low for 10 minutes, stirring occasionally (you can add all the chicken as long as it isn't crowding the pan)

  7. Cook the other half of the chicken on low covered for 10 minutes, stirring occasionally

  8. Remove chicken from heat and assemble your wraps with chicken, lettuce, tomato, onions and tzatziki sauce
